Day one: change the administrator passwords they knew, on the domain, the firewall, Microsoft 365, the backup system and any cloud service the business runs on. Not because you distrust them; because you do not know who else knew them.Day two: find the documentation. There may not be any. Write down what you can: which server does what, where the backups go, which vendors you pay, what renews when.Day three: check the backup. Actually restore a file. If you cannot, that is the first job for whoever comes next.This week: decide whether to hire again or move to a managed provider. One person is a single point of failure; a team with a written process is not.
